Sablé Breton originated in the Brittany region of northern France, where butter has always played a central role in traditional pastry. They are biscuits known for their unique texture: delicately crisp on the outside, but rich, soft, and almost buttery on the inside.
At Gleba, we have reinterpreted this classic recipe with our own approach to ingredients and processes. They are handmade in our bakery, using flour milled on our stone mills, with no refined flours or white sugar.
Butter remains the star, resulting in a simple yet characterful biscuit. Perfect for accompanying specialty coffee or a comforting cup of tea.
